Meet Dr. Karen West

The pattern I could not unsee

For fifteen years I had a kind of laboratory nobody talks about. Not a research lab. A practice. The same families came through my office year after year: grandparents, then their children, then their grandchildren. I was not studying them. I was treating them. But hands learn things over that many years, and what mine learned would not leave me alone. The grandparents, raised on real food, had strong frames and few complaints and a resilience that carried them into old age. Their children carried something new: chronic, low-grade trouble that never quite had a name. And their grandchildren, the ones fully raised on the modern pantry, were heavier, more inflamed, always sick, always something. Same gene pools. Each generation further from real food. Each generation visibly worse off. No single appointment shows you that. Fifteen years of families do.

“Same gene pools. Each generation further from real food. Each generation visibly worse off.”

Finding the science

I did not want an instinct. I wanted an explanation. So I went looking for the research, and I found that the pattern I was seeing with my hands had been documented for nearly a century — beginning with a dentist named Weston Price who traveled the world in the 1930s studying communities that still ate the way their great-grandparents had, and continuing in the modern literature on nutrition and development. The science said what my practice had been showing me all along: genetics sets the ceiling, and what a body is given while it is being built decides whether it ever gets there.

Living it first

Before I ever taught any of this, I lived it. My husband and I raised our four children on real food from their very first days. Not as an experiment, and not perfectly, but as a standard: real food, no shortcuts, from the beginning. I have watched what that foundation builds, in my own kitchen, for years now. When I tell you this works, I am not quoting a study at you. I am telling you what I served for dinner.

The spa years

I opened West Health Spa in Gainesville, and for five years I had the privilege of caring for this community: hands-on wellness care, functional health work, and a team I remain proud of. Five years of that work taught me something the treatment room alone never could: most people do not need another appointment. They need someone to explain, clearly and without fear, how their body actually works and what to do first. Thank you, Gainesville. You taught me what this next chapter had to be.

The injury, and the permission

In 2026, an injury ended my ability to practice chiropractic. I will not pretend that was a small thing. It was the work of my hands for more than fifteen years. But I have never believed in staying at the edge of what was, and by the time the door closed I already knew where the work was pointing: functional medicine, the study of the body as one connected system, had been pulling at me for years. The injury did not create this path. It removed the last thing standing between me and it.

Why the channel

An office can hold twenty patients a day. This can reach anyone who needs it. Every week I share what I know: how to fix a pantry, how to feed a child, how to ask better questions than the ones that end in “your labs are normal.” It is free, it always will be, and it comes with my one promise: I will never tell you something I have not lived, studied, or seen with my own hands.

Training and credentials

The letters after my name matter because they mean the pattern I saw with my hands has training and science behind it. The full, formal record — degree, functional-medicine training, diplomate work, license history, and the years of practice — lives on the credentials page, written out exactly and honestly, including what I do and do not do now.

The facts, plainly: Doctor of Chiropractic (retired from practice, 2026) · functional health educator · 15+ years in clinical practice · founder of West Health Spa (five years) · mother of four raised on real food from day one · Gainesville, Florida.

If you are new, start with the five videos on the Start Here page — or come say hello on the channel. I am so glad you are here.
